Purpose – In this research, determining the institutionalization dimensions such as transparency, consistency and professionalism in the organizational activities of coffee shops and the burnout levels of their employees; it is aimed to reveal whether the level of institutionalization in enterprises affects the level of burnout of employees. Design/methodology/approach – The fact that Konya is a university city and the rapid rise of the young population, who are more active in the field of socialization, has led to a significant increase in the number of local and foreign new generation coffee shops. For this reason, the province of Konya was determined as the research universe. The population of the research consists of employees in 44 coffee shops that are determined based on the list of registered/approved food businesses in Konya Provincial Directorate of Agriculture and Forestry. Based on the information received from the enterprises, the average number of employees is thought to be 500. Between 1-30 August 2022, 400 questionnaires were distributed to businesses by convenience sampling method. The number of returned questionnaires was 348, and the number of questionnaires that were evaluated was 303. Factor, correlation and regression analysis were applied to the obtained data and the results were interpreted in detail. Findings – As a result of the analysis of the data, it was revealed that institutionalization has a significant and negative effect on burnout. It was determined that the consistency factor of institutionalization had a negative effect on burnout, while the factors of transparency and professionalism did not have a significant effect on burnout. Discussion – Burnout is a condition that negatively affects organizational and individual performance. Therefore, it is extremely important to carry out studies to reduce the level of burnout. The studies carried out by businesses to reduce the level of burnout also contribute to increasing the degree of institutionalization. In this context, a striking point in the data obtained as a result of the studies is that the burnout rate is low in enterprises with a high level of institutionalization. This situation can be interpreted as that the employees of the enterprises enjoy working in this job. In addition, the high level of institutionalization can be accepted as an indicator of the importance that enterprises attach to institutionalization. For this reason, it is extremely important in terms of speeding up the institutionalization process of enterprises, providing a better working environment for their employees, reducing their burnout levels and increasing their performance.
